It is the most popular Corfu plate and is served in special events and celebrations. In the city made with beef (usually leg) stuffed with minced garlic, parsley, salt and pepper. To prepare the tomato sauce, we use oil, cinnamon, cloves, salt pepper, nutmeg, allspice, cumin and bay leaf. The traditional pastistada is made with cock, it is said to be well-cooked only when the sauce is so thick that dyes the mustaches. There are even pastistada variants made with fish like “lobster pastitsada”.
